I crave soups in the fall and winter...I want to make a new soup every day. I even bought a soup cookbook years ago, but I don't think I've made one recipe from it.
I just like to look.
I find the best recipes are the ones that are tried and true and handed down to you by friends or family.
Well, today I'm your friend.
I'm giving you a recipe that I got from a friend (Hi Vicki C.) about 20 years ago...
It is so scrum-dilli-ish, you'll want to make a double batch next time!
Here goes...
Italian Sausage Soup
Ingredients
1.5 lb. package Italian sausage (hubby says to tell you that Johnsonville is the best)
2 yellow onions
2 cloves garlic
1 28oz can whole tomatoes
2 beef bouillon cubes (I use beef base, or you can use 2 cans beef broth)
28 oz water (use the tomato can)
3/4 C. red wine (I always use Cabernet)
Parsley (you can use dried)
1 package of egg noodles
Recipe
1. Chop all the sausage links into 1 inch pieces
3. Brown the sausage in a dutch oven
4. After it has browned on all sides, add the chopped onion and garlic
Cook until onions start browning...Lookin' good
5. Now add the tomatoes, bouillon, water and red wine. Bring to a simmer
6. Chop up a few sprigs of fresh parsley, or a few shakes of dried
7. Add the parsley and cover the pot. Simmer lightly for 1 hour and fifteen minutes
8. After the cooking time is done, add in the desired amount of noodles. I usually use half of a medium sized bag. Cook for an additional 10 minutes or until the noodles are tender
9. Ladle it up and sprinkle on some grated Parmesan
I always top mine with a little extra parsley too...for that fabulous color!
Dig in and I dare you to NOT make all those mmmmmmm sounds while eating it

OH gosh, that looks SO yummy as I am sitting here very cold after we got snow yesterday.
I don't have a dutch oven, but since you didn't put this from stove top into the oven, is it necessary to use one?
Can I do the same thing with a large pot?

I have a question, isn't the taste of the saussage overpowering? can you taste anything else??? I would like to try it, but am affraid it would be just sausage, nothing else. thanks.
Pavla~ It really is a fabulous soup. I never had the feeling of an overwhelming taste of sausage. The particular sausage I use is Johnsonville Sweet. It is a high quality meat that is not overseasoned. Hope you like it!
Just had to share...made this soup a couple of times last winter and loved it! Since it's getting cool again, I'm getting hungry for it and just had to look up your recipe again. Thanks so much for posting this. It really is delicious!
