Summer Griling: Zucchini {from the garden}

I'm always amazed at the volume of zucchini we get every year from our humble little garden.  I send my punks out there every day and they always bring back one or two zucchinis.  If we happen to skip a day, things can get scary.....those things get gargantuon! 

Anyway, we LOVE to grill all that zucchini.  It's on our plates at least three times a week, and we never tire of it....well, the punks probably do....



Its real easy.....after cleaning the zuchs just cut them into spears and throw them in a Ziploc baggy with a little olive oil and S&P for about 30 minutes. 



Toss em on a hot grill till they are cooked.  Make sure not to cook them too long tho....you don't want mush, you want crunch!

We do the same thing, but add garlic powder also. We are garlic fanatics!

I love zucchini! My parents have been giving me tons - just made Sweet Potato Zucchini bread last night - yum! Yours looks delish :)
