This shrimp is to die for! We make this once a week around our house, even in non-grilling months. We just use a pan on the stove....but there is nothing like grilled shrimp!
Grilled Shrimp Tacos
You will need:
1 Bag of shrimp (see below)
Marinade ingredients (see below)
1 Lemon
Start by making your marinade:
1/3 c. olive oil
1 T. Salt
3/4 T. granulated garlic
1/2 T. black pepper
1 t. crushed red pepper flakes
Juice of 1 lime
1 t. lime zest
We buy these bags of frozen shrimp at Costco. They are deveined with the tail on.
They keep well and defrost quickly in water
Make sure to dry your shrimp very well with a towel before marinating. Place in a ziploc bag and marinate for at least 4 hours

After marinating, skewer the shrimp using 2 skewers per shrimp rack,
so they aren't floppin' all over the place
Place your shrimp right on the HOT grill. A hot grill is key to grilling! Make sure your coals are at their peak and if you have a removable grill, make sure you have put it on long before now,
so it can get nice and hot
Cook 3-4 minutes per side
Squeeze lemon over all the tails at the end of grilling time
Pile up all the shrimp and take the tails off. At this point we chop our shrimp
into bite sized pieces (3-4 pieces per shrimp)

Get yourself some warm corn tortillas

...and all the essentials~ shredded cabbage, chopped cilantro and fresh lime
I have to say it: 'Livin La Vida Loca!'
Pile those babies high with all the fixins.
I like my rice on the side....hubmiester likes his INSIDE the taco. Who ever heard of that?
But, I tried it and it's fabuloso

Update! I was too stinking lazy to fire up the grill, plus it was getting late, so I used my trusty cast iron skillet to make these - OMG so good! The marinade was fantastic and I plan on making it again soon!
